Vegan Gyro With Tzatziki Sauce

Vegan Gyro: a thinly-sliced Mediterranean spiced ‘meat-loaf’ with an abundance of flavor and texture. This ‘meaty’ dish also happens to be an amazing protein-packed homemade seitan recipe (seitan is a ‘vegetable meat’ made from vital wheat gluten). Among several benefits, seitan contains no cholesterol and saturated fats, and it’s also excellent for athletes due to its high protein content. Try this recipe served in a warm pita bread with fresh veggies and our Tzatziki Sauce.


Makes 3 wraps.

  • 1.5 cups vegetable broth
  • 2 tbsp olive oil
  • 1.5 cups vital wheat gluten
  • 1/4 cup chickpea flour
  • 1/3 cup nutritional yeast
  • 1/2 tsp salt
  • 1 tbsp paprika
  • 1/2 tsp curry powder
  • 1/2 tsp ground cumin
  • 1/4 tsp chili powder
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • 1/4 black pepper
  • 1/2 tsp dried oregano
  • 1/2 tsp thyme
  • 1/2 dried rosemary
  • 1/2 tsp cornstarch
  1. In a medium-sized bowl, combine and whisk together vegetable broth and olive oil.
  2. In a separate larger bowl, combine the vital wheat gluten, chickpea flour, nutritional yeast, cornstarch, and all the spices (the remaining ingredients). Whisk ingredients thoroughly.
  3. Create a ‘well’ in the center of the bowl (dry ingredients) and pour in the broth + olive oil mixture.
  4. Mix all the ingredients into a dough.
  5. Once combined, knead the dough for 2-3 minutes.
  6. Let the dough sit for 10 minutes. Knead again for 30 seconds while creating a rectangular shape with the dough.
  7. Place the dough onto a cutting board and cut it into about 3 smaller loaves.
  8. Wrap each loaf loosely in foil.
  9. Boil water on a high temperature and place the wrapped loaves into a steamer basket. Reduce heat to medium-low, cover and cook for 30 minutes.
  10. Once cooked, carefully remove the loaves from the pot and place them to cool for about 10 minutes.
  11. Slice each loaf into thin pieces.
  12. Add a few drops of olive oil in a frying pan and gently sautee the slices for 2-3 minutes (on each side). The texture should be firm and color should appear darker.
  13. Serve on warm pita bread wrapped/folded with fresh lettuce, tomatoes, onions and our Tzatziki Sauce!
